THE lockdown has begun to take a toll on most people, hence the need for an escape into the kitchen.

Baking is a therapeutic activity that can be done to free us from the monotony of enclosure.

Through baking, the home will be filled with the smell of freshly baked scones and of course, the family members will love the great taste.

This recipe is simple and makes use of ingredients that you probably have already stocked up for the lockdown. lf not, you can easily get them at the nearest convenience store.

We are basically going back to baking basics and creating some wonderful scones that are hearty and homely.

Preparation: 1 minute

Cooks in: 25 minutes

Makes: 16 scones

Ingredients

3 cups self-raising flour

80 grams margarine

1 ¼ cups milk

Jam to serve

Plain flour for dusting

Method

◆ Preheat the oven at 200°C. Preheating the oven enables the oven to have a consistent temperature that makes sure that the scones bake evenly.

◆ In a bowl and using fingertips, rub margarine into the flour until the mixture resembles breadcrumbs. The idea here is to establish consistence of texture and taste. When the margarine renders (melts), it enables the scones to bake evenly.

◆ Make a well in the centre and add the one cup of milk. Mix until mixture forms a perfect dough. Add more milk if required.

◆ Put on a lightly floured surface. Knead but do not over knead, do it gently so that the scones will be gentle.

◆ Lightly dust a flat baking tray with plain flour.

◆ Pat down the dough into a 2cm-thick round then use a 6cm diameter cutter or the lid of a standard peanut butter bottle to cut out the scones.

◆ Press remaining dough together and cut out the remaining scones.

◆ Sprinkle the tops with a little bit of plain flour.

◆ Place on the baking tray.

◆ Bake for 20 to 25 minutes or until golden and well risen.

◆ Transfer to a wire rack.

◆ Serve warm with jam.

The scones are good for breakfast, brunch or even for mid-afternoon tea. Try this out and the lockdown will be a breeze.
